Colour: straw yellow with greenish reflections and fine perlage. Nose: elegant note of white flowers, walnut, pear and citrus fruit blend with scent of Mediterranean herbs. Palate: full and sapid, elegant and persistent, fresh with a distinctive appeal of olfactory notes.
Calcareous marl and limestone
Fermentation and maceration at controlled temperature 15-18°C for 30 days. Evolution in the yeasts at low temperature until Spring. Slow re-fermentation in large containers for 40-50 days at 12-14 °C. Stay on yeasts for 30 days.
Great as aperitive, it matches with delicate fish based plates. Perfect with oysters and appetizers based on seafood.
